125g dried pasta shapes 2 spring onions, trimmed and chopped 50g sugar snap peas or green beans sliced 100g broccoli broken into small florets 1/2 pepper, any colour, chopped 40g frozen peas Handful cherry tomatoes, halved 100g low fat soft cheese with garlic and herbs 1/2 lemon zest, finely grated 50ml semi-skimmed milk 1 tsp vegetable oil Chopped fresh parsley From Everybody Healthy (Taste for Life) Serves 2 317 kcal per portion |

February - Leek and Potato Soup

Butter for sweating down 3 med. carrots chopped 3 leeks sliced 3 med. potatoes diced. 2 pints veg or chicken stock. I use 3 or 4 cubes. Salt and ground black pepper 1tsp sugar Milk if necessary. |

450g pack good-quality pork sausages (at least 75% meat) 2 medium onion, cut into thick slices 150ml unsweetened apple juice Pinch of dried sage 2tbsp olive oil 2 medium free-range eggs, plus egg yolk 100g plain white flour 225ml semi-skimmed milk Serves 4 |
